Twice Baked Potatoes
Ingredients
- 4 - 1lb baking potatoes
- 1/4 cup Ranch dressing
- 1/2 cup sour cream
- 2 slices bacon – fried crisp and crumbled into bits
- 4 oz Cheddar cheese – cut in chunks
- Kosher salt (to taste)
- Fresh ground pepper (to taste)
Methods/steps
- Preheat oven to 400 degrees.
- Scrub potatoes, blot dry, rub skin with oil and prick with fork to vent.
- Place potatoes standing on end in muffin tin and bake for 1 hour. Remove from oven and reduce temperature to 350 degrees.
- Slice off tops of cooked potatoes, scoop out centers and mash in separate bowl – leaving a little bit of potato on the skin sides for a sturdy shell.
- In the bowl with mash potato filling, add remaining ingredients and mix thoroughly.
- Spoon mixture into shells evenly, return to oven and bake for 20 minutes.
