  • Measuring cups and spoons
  • Sharp knife
  • Medium mixing bowl
  • Cutting board
  • A small bowl
  • Mixing spoon

Ingredients

  • 5-6 small ripe tomatoes
  • 1 anaheim pepper (or if you are BRAVE a jalapeño pepper)
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped onion (red onion suggested)
  • 2 small garlic cloves - finely chopped cilantro
    1 large lime
  • 2 tablespoons olive oil
  • salt - black pepper Cayenne pepper (optional)

Methods/steps

  1. Dice all tomatoes.  Put all the juice and as much of the seeds as you want into your large mixing bowl.
  2. Repeat step 1 with the bell pepper, onion, anheim pepper, cilantro, and garlic.  Place these into your small mixing bowl.
  3. Add the bell pepper, red onion, cilantro, and garlic to the bowl with diced tomatoes.  Stir gently to combine all ingredients.
  4. Cut lime into quarters and squeeze the quarters over the tomato mixture.
  5. Add olive oil.  The salt, black pepper and cayenne you will add to taste.  Start with a pinch and go from there.
  6. Stir mixture gently, taste and if it is rockin’, then go ahead and cover and refrigerate for 2 hours before serving!
