Mom's Peanut Butter Pie
A pie is a baked dish which is usually made of a pastry dough shell that covers or completely contains a filling of various sweet or savoury ingredients. Pies can be either "filled", where a dish is covered by pastry and the filling is placed on top of that, "top-crust," where the filling is placed in a dish and covered with a pastry/potato mash top before baking, or "two-crust," with the filling completely enclosed in the pastry shell.

  • 9” Pie Plate

Ingredients

  • 1/3 cup of butter (Crust)
  • 1 cup of chocolate chips (Crust)
  • 2 1/2 cups of rice krispies (Crust)
  • 1 (8 oz) pkg cream cheese
  • 1 (14 oz) can Eagle Brand Sweetened Condensed Milk
  • 3/4 cups of peanut butter
  • 3 tbsp lemon juice from concentrate
  • 1 tsp of vanilla
  • 1 cup (1/2 pint) whipping cream (whipped)

Methods/steps

  1. In a heavy saucepan, over low heat, melt butter and the chocolate chips.
  2. Remove from heat and mix in rice krispies until completely coated.
  3. Press into bottom and sides of well greased 9” pie plate to cool.
  4. In a separate bowl mix cheese until fluffy. Mix in milk and peanut butter until smooth.
  5. Stir in lemon juice and vanilla.
  6. Fold into whip cream or cool whip.
  7. Pour into Chocolate Crunch crust.
