Mighty Mice Peanut Butter Cookies
A peanut butter cookie is a type of cookie that is distinguished for having peanut butter as a principal ingredient. The cookie generally originated in the United States, its development dating back to the 1930s.

  • Small mixing bowl
  • Wooden spoon
  • Plastic wrap
  • Baking sheets
  • Cutting board
  • Wire cooling racks
  • Sharp knife
  • Oven mitts

Ingredients

  • 1 cup creamy peanut butter
  • ½ cup softened butter
  • ½ cup sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ cup peanut halves
  • 2 tablespoons green and red M&Mʼs miniature baking bits
  • 4 teaspoons miniature semisweet chocolate chips
  • Cake decorator holly leaf and berry candies
  • 60 to 66 pieces red shoestring licorice (cut to 2 inches each)

Methods/steps

  1. Pre Heat Oven to 350 °f .
  2. In one large bowl, add peanut butter, softened butter, sugar and brown sugar. Mix until creamed.
  3. In small bowl, beat egg and vanilla extract together and combine with creamed ingredients.
  4. In second large bowl, mix flour and baking soda. Gradually add dry mixture to the creamed mixture. (Dough will be soft)
  5. Refrigerate for 1 hour or until easy to handle.
  6. Roll into 1 inch balls and place 2 inches apart on ungreased cookie baking sheets. Pinch each ball at one end to taper. Insert two peanut halves in center of each ball for ears. Add one M&M baking bit nose and two chocolate chips for eyes. Arrange holly and berry candies in front of one ear.
  7. Bake for 8-10 minutes or until set.
  8. Gently insert one licorice piece into each warm cookie for tail. Remove to wire racks to cool completely.
