Mexican Chicken Crepes

Mexican Chicken Crepes
A crêpe is a type of very thin, cooked pancake usually made from wheat flour. The word, like the pancake itself, is of French origin, deriving from the Latin crispa, meaning "curled." While crêpes originate from Brittany, a region in the northwest of France, their consumption is nowadays widespread in France. Crêpes can be compared to the African injera, the tortilla, the Indian dosa and the Mexican sope.

Ingredients

  • 1 c. Sour Cream
  • 2 Cloves garlic pressed
  • 1 tsp. each salt and cumin
  • 1 (4 oz) can green chilies, drained
  • 2 ½ c. (10 oz) shredded Jack cheese
  • 1 ½ c. each diced cooked chicken and
  • 1 ½ c. diced green onions
  • 1 c. shredded cheddar cheese

Ingredients Creps:

  • 3 eggs
  • o 1 ½ tbsp vegetable oil
  • 3 tbsp all purpose flour
  • 1 cup Milk
  • 2/3 cup Masa Harina
  • ¼ tsp salt

Methods/steps

  1. Beat together eggs, milk and oil.
  2. Add Masa Harina, flour and salt. Beat until smooth.
  3. Pour about ¼ cup batter onto hot greased crepe pan. Cover the whole bottom.
  4. Cook 1 side until brown. Remove and cool.


How to Make Crepes:

  1. Pre heat Oven to 350 °.
  2. Boil water and add chicken until cooked.
  3. Stir together sour cream, spices, chilies, jack cheese, chicken and onions.
  4. Spoon ½ cup mix down center of the crepe.
  5. Roll and place seam down, single layer in baking dish.
  6. Bake, covered for 20-30 minutes.
  7. Remove cover sprinkle with remaining cheese.
  8. Return to oven until cheese melts 3-5 minutes.
  9. Serve with shredded lettuce, chopped tomatoes and Guacamole.
