Mashed Acorn Squash w/ Apples

Ingredients

  • 4 acorn squash, halved lengthwise, seeds removed
  • 2 tbsp sugar
  • 3-4 tbsp honey
  • Kosher salt and freshly ground pepper
  • 4 large Gala apples
  • ΒΌ (scant) tsp cinnamon
  • 2 tbsp unsalted butter

Methods/steps

  1. Preheat oven to 450 degrees.
  2. Season the cut sides of the squash with salt and pepper and set them, cut side down, on a baking sheet.
  3. Bake for about 1 hour, or until the flesh is tender and caramelized on the bottom.
  4. Let cool on the baking sheet.
  5. Meanwhile, peel and core the apples; cut them lengthwise into eighths.
  6. Slice each piece crosswise 1/4-inch thick.
  7. Transfer to a bowl; toss with the sugar and cinnamon.
  8. Spread the apples on a baking sheet; bake 30 minutes, or until tender and brown.
  9. Peel the squash and transfer it to a bowl along with any caramelized bits from the pan. Mash coarsely.
  10. Add the apple pieces with any caramelized bits.
  11. In a saucepan, bring the honey and butter just to a boil.
  12. Add the squash, stir well and season with salt and pepper.
