Eggs with Smoked Salmon

In America, smoked salmon is normally sliced very thinly and is often served on bagels with cream cheese, or on Melba toast with sliced red onion, lemon and capers. |
Ingredients

2 tbsp sour cream

3/4 tsp fresh lemon juice

1/4 tsp finely grated lemon peel

1/4 tsp chopped fresh thyme

4 large eggs
-
1 tbsp butter
-
1 large green onion (thinly sliced)

2 ounces thinly sliced smoked salmon

Salt and Pepper (for taste)
Methods/steps

Mix sour cream, fresh lemon juice, finely grated lemon peel and chopped fresh thyme in a small bowl. Set aside.

Mix eggs in a medium bowl and sprinkle with Salt and Pepper.

Melt butter in a medium nonstick skillet over medium heat and add thinly sliced green onion and sauté for 1 minute.

While stirring add the eggs and cook until done.

Divide scrambled eggs between plates and top the eggs with thinly sliced smoked salmon.

Drizzle with lemon cream and serve.
