Cucumber-Cream Soup

Cucumber-Cream Soup
Some cucumber soups are just a blend of ingredients (cucumber, spices, other vegetables or fruits, etc.) served cold, others are cooked, possibly in some kind of broth, and served either hot or chilled.

  • Measuring cups and spoons
  • Large saucepan
  • Food Processor
  • Wooden spoon
  • Cutting board and plate
  • Sharp knife

Ingredients

  • 3 medium cucumbers – peeled, seeded and chopped
  • 1 small onion - chopped
  • 3 tbsp butter
  • 1/4 cup all purpose flour
  • 3 cups chicken broth
  • 1 cup whipping cream

Methods/steps

  1. In saucepan, melt butter, sauté cucumbers and onion until tender. Stir in flour.
  2. Add chicken broth, whipping cream, and stir until thick and bubbly.
  3. Pour half of the mixture in a food processor and blend until smooth. Set aside and repeat with remaining portion of mixture.
  4. Cover and chill until served. Garnish with cucumber slices!
