Cucumber-Cream Soup
Ingredients
- 3 medium cucumbers – peeled, seeded and chopped
- 1 small onion - chopped
- 3 tbsp butter
- 1/4 cup all purpose flour
- 3 cups chicken broth
- 1 cup whipping cream
Methods/steps
- In saucepan, melt butter, sauté cucumbers and onion until tender. Stir in flour.
- Add chicken broth, whipping cream, and stir until thick and bubbly.
- Pour half of the mixture in a food processor and blend until smooth. Set aside and repeat with remaining portion of mixture.
- Cover and chill until served. Garnish with cucumber slices!
