Cinnamon Toast Muffins
Ingredients
- 1½ cups whole wheat flour
- 1 cup rolled oats
- 1/3 cup sugar
- 1 tbsp baking powder
- 2 tbsp ground flax seeds (optional)
- Cinnamon sugar
- 1 cup of soy milk or low fat
- 1 egg
- 1/4 cup canola oil
- 1 tsp vanilla
Methods/steps
- In a bowl combine flour, oats, sugar, baking powder, and seeds together
- In a separate bowl, combine the following wet ingredients: milk, egg, canola oil, vanilla
- Mix all ingredients until moistened
- Fill muffin cups 3/4 of the way full
- Sprinkle a generous amount of cinnamon sugar on top of each muffin
- Bake in oven at 400 degrees for 12 minutes or until cooked through
