Chinese Chicken Salad
Ingredients
Salad noodles:
- 1/3 lb rice stick noodles
- vegetable oil or soy oil (for frying)
Dressing:
- 3 tbsp sugar
- 7 tbsp rice wine vinegar
- 2 tsp salt
- 1 tsp lemon juice
- ¼ tsp white pepper
- ¼ cup sesame oil
- ½ tsp 5-spice
Salad:
- 2 cooked chicken breast
- 1 head shredded lettuce
- 3 chopped scallion
- ¾ cup sliced celery
- 1 small sliced cucumber
- 3 tbsp toasted sesame seeds
- ½ cup toasted almonds
Methods/steps
- Break apart rice noodles and deep fry in 2-3” hot vegetable or soy oil, above 350F. Noodles will fry within seconds and will be white and crisp when done. Larger quantities may be fried in batches. Drain and set aside.
- Mix dressing ingredients, shake well and set aside.
- Shred chicken breasts. Mix 1 or 2 tsp of dressing with chicken and set aside.
- Just before serving, lightly mixed fried rice noodles, vegetables, chicken, sesame seeds and nuts. Pour dressing, toss and serve!
