Carrot Souffle

A soufflé is a light, fluffy, baked dish made with egg yolks and beaten egg whites combined with various other ingredients and served as a savory main dish or sweetened as a dessert. |
Ingredients
- 2 lbs carrots – peeled and trimmed
- ½ cup butter – cut in chunks
- ¾ cup packed brown sugar
- ¼ cup flour
- 1 ½ tsp baking powder
- ¾ tsp baking soda
Methods/steps
- Preheat oven to 350 degrees and grease soufflé/baking dish.
- Boil carrots until tender, drain and puree in food processor for 30 seconds.
- Add the rest of the ingredients and blend until smooth.
- Pour mixture into soufflé/baking dish and place dish into baking pan filled with 1 inch of water.
- Bake for 1 hour and serve!
NOTE: Souffle will sink slightly when cooled.
