Carrot Souffle

Carrot Souffle
A soufflé is a light, fluffy, baked dish made with egg yolks and beaten egg whites combined with various other ingredients and served as a savory main dish or sweetened as a dessert.



Get Out Your Tools

Serves

  • Cutting board and plate
  • Sharp knife
  • Saucepan
  • Food processor
  • 1 ½ quart soufflé or baking dish
  • Baking pan

Ingredients

  • 2 lbs carrots – peeled and trimmed
  • ½ cup butter – cut in chunks
  • ¾ cup packed brown sugar
  • ¼ cup flour
  • 1 ½ tsp baking powder
  • ¾ tsp baking soda

Methods/steps

  1. Preheat oven to 350 degrees and grease soufflé/baking dish.
  2. Boil carrots until tender, drain and puree in food processor for 30 seconds.
  3. Add the rest of the ingredients and blend until smooth.
  4. Pour mixture into soufflé/baking dish and place dish into baking pan filled with 1 inch of water.
  5. Bake for 1 hour and serve!

NOTE: Souffle will sink slightly when cooled.
