Bistro Beef Salad
Ingredients
- 1 lb small red potatoes, quartered
- 1/4 cup red wine vinegar
- 6 cups torn red leaf lettuce
- 3/4 lb cooked lean roast beef, thinly slice
- 1 cup thinly sliced onion, keep in rings
- 2/3 cup no salt added salsa
- 2 tsp olive oil
- 2 cups torn curly endive
- 1 1/2 cups chopped tomato
- 1 cup thinly slice cucumber
Methods/steps
- Cook potatoes until tender. Drain well; let cool.
- Combine salsa, red wine vinegar, & oil; sitr well.
- To serve, place even amounts of lettuce & endive on 4 plates.
- Evenly arrange potato, beef, tomato, cucumber, & onion over salad.
- Spoon salsa mixture evenly over salads.
