Big Butter Lettuce Salad
Ingredients
- 5 slices bacon
- 6 oz. sourdough bread, cut into 1 inch chunks
- 34 cup mayonnaise
- 3 tbsp pickle relish
- 12 cups butter lettuce, torn into bite size pieces
- 2 avocados, peeled, cut into 1 inch chunks
- 1/4 cup ketchup
- 2 tbsp chopped scallion
- 1 pint cherry tomatoes
- 1 cup thinly sliced red onion
Methods/steps
- Preheat oven to 400 degrees.
- In skillet over medium-high heat, cook bacon until crisp. Transfer bacon to paper towels; discard all but 1 Tbs. fat.
- Cut bacon into 1-inch pieces; set aside.
- Toss bread chunks with fat; spread in single layer over baking sheet.
- Bake until crisp & lightly golden.
- Meanwhile, combine mayonnaise, ketchup, relish & scallion.
- In serving bowl combine lettuce, tomatoes, avocado & onion with bacon & croutons.
- Toss with dressing & serve.
