Beets in Sweet Orange Sauce
Ingredients
- 3-5 beets
- 1 tsp grated orange peel
- 1/3 cup orange juice
- 2 tbsp brown sugar
- 1/8 cup chopped fresh parsley
- 1 tsp chopped crystallized ginger (or 1/2 tsp ground ginger)
Methods/steps
- Scrub well or peel beets and slice.
- Place in steamer. Cover tightly and heat to boiling.
- Reduce heat and steam for 10-15 minutes or until tender. Drain.
- Place beets in dutch oven or large skillet.
- Stir in orange peel, orange juice and brown sugar.
- Cook uncovered over med-high heat 5-8 min, stirring, until sauce is reduced and beets are glazed.
- Stir in parsley and ginger.
- Serve hot.
