Beet and Apple Salad
Ingredients
- 1 lb uncooked beets, peeled and grated
- 2 scallions, diced
- 4 oz. apple juice
- 4 oz. olive oil
- 1 lb apples peeled and grated
- 1/2 lb celery root, peeled and grated
- 2 oz sherry vinegar
- 2 bunches picked watercress
Methods/steps
- Mix beets, apples, celery root & scallions together; season with salt & pepper, set aside.
- Whisk together apple juice, vinegar; whisk in oil slowly.
- Pour mixture over beets; cover tightly & refrigerate 3 hours.
- Remove from refrigerator, toss in watercress & serve.
