Beefy Broccoli Asparagus Salad
Ingredients
- 3/4 pound boneless beef sirloin steak
- 8 cups water
- 4 cups cut fresh asparagus (1-inch pieces)
- 2 cups fresh broccoli florets
- 1/4 cup reduced-sodium soy sauce
- 2 tblsp white wine vinegar
- 4-1/2 tsp sesame oil
- 1 tsp chopped fresh gingerroot
- 2 tsp sugar
- Dash pepper
Methods/steps
- Put steak on a broiler pan covered with non-stick cooking spray and cook each side for about 6-10 minutes.
- In a large saucepan, bring water to a boil and add asparagus and broccoli cover and cook for 3 minutes.
- Drain and right away place vegetables in ice water. Drain and pat dry and refrigerate.
- For dressing, mix the soy sauce, vinegar, oil, ginger, sugar and pepper and shall well in jar.
- Thinly slice beef and place in a bowl and add dressing and toss.
- Just before serving add the vegetables.
