Beef Tenderloin with Honey-Peach Sauce
Ingredients
- 2 1/2 lb beef tenderloin
- 1 cup unsweetened pineapple juice
- 1 1/2 cups fresh peach slices, chopped
- 1 tsp instant beef bouillon granules
- 1/3 cup lemon juice
- 2 tbsp cornstarch
- 2 tbsp honey
- 2 tbsp butter
Methods/steps
- Preheat oven to 425 degrees.
- Place meat on rack in shallow roasting pan.
- Season with salt & pepper. Bake until thermometer registers 140 degrees for medium rare. remove from pan. Cover & let stand 15 minutes.
- For sauce, combine pineapple & lemon juice & cornstarch in a saucepan.
- Add butter, honey & bouillon.
- Cook & stir until thickened & bubbly. Cook & stir 2 minutes longer.
- Stir in peaches; heat through.
- Thinly slice meat across grain.
- Serve with sauce.
