Banana Nut Muffins

Ingredients

1/4 cup unsweetened applesauce

1/4 cup Earth Balance Buttery Spread

1 cup sugar or other sweetener
-
2 tsp soy flour combined with 2 Tbsp water

2 large bananas
-
2 cups flour
-
1 tsp baking powder
-
1/2 tsp baking soda
-
1Â cup soy milk with 1 tbsp cider vinegar

1 tsp vanilla
-
1/3 cup coconut, lightly toasted (or your favorite nut)
Methods/steps

Preheat oven to 375ºF and grease muffin pan.

Combine applesauce, margarine and sweetener until fluffy. Beat in soy flour mixture, followed by bananas. Transfer to a mixing bowl.

Combine flour, baking powder and baking soda. Stir flour mixture and soymilk mixture alternately into banana mixture, until just moistened. Then stir in vanilla.

Pour batter into muffin cups, and fill about 3/4 full. Sprinkle with coconut. Bake until golden (23-25 min). Cool on a rack before removing from muffin pan.

Freeze extra muffins—they make a great work snack when you’re rushing out the door.
