Baked Potato Soup
Ingredients
- 4 medium baking potatoes
- 4 tbsp unsalted butter
- 4 tbsp all purpose flour
- 4 cups milk
- 1/2 tsp kosher salt
- 1/2 tsp fresh ground pepper
Methods/steps
- Wash the potatoes and poke several times with a fork, microwave for about 18-20 minutes.
- Let rest for 5 minutes. After they’ve cooled, peel skin and cut into cubes or bite size pieces. Set aside.
- In saucepan, melt butter and mix constantly while sprinkling in flour.
- Add milk and continue whisking until mixture thickens.
- Remove from heat. With a wooden spoon, stir in potatoes and seasonings.
