Avocado Quesadillas
Ingredients
- 4 vine ripened tomatoes
- 2 tbsp chopped red onions
- 1/2 tsp hot sauce
- 6 tbsp chopped fresh coriander
- 2 2/3 cup coarsely grated Monterey cheese
- 2 firm avocados
- 4 tsp fresh lemon juice
- 1/2 cup sour cream
- 8 (6-7 inch) flour tortillas
- 1/4 tsp vegetable oil
Methods/steps
- Seed tomatoes & cut into 1/4-inch dice.
- Quarter avocado, removing pit & peel. Cut avocado into 1/4-inch dice.
- In a small bowl stir together tomatoes, avocado, onion, lemon juice & hot sauce; season with salt & pepper.
- In a bowl stir together sour cream, coriander & salt & pepper to taste.
- In a lightly oiled skillet, lay a tortilla. Sprinkle with cheese.
- Place another tortilla on top of the cheese.
- Heat until cheese melts.
- Makes 3 more quesadillas.
- Cut quesadillas into 4 wedges.
- Top with avocado & sour cream.
