  • 9 x 5" loaf pan

Ingredients

  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup mashed avocado
  • 1/2 cup buttermilk
  • 1/2 cup chopped pecans

Methods/steps

  1. Preheat oven to 375 degrees F. Generously grease a 9 x 5" loaf pan. 
  2. Combine flour, sugar, baking powder, soda, and salt in a large mixing bowl. 
  3. Whisk to blend thoroughly. 
  4. In a separate bowl, beat together the egg and avocado. 
  5. Stir in the buttermilk. 
  6. Add to the dry ingredients and blend well. 
  7. Stir in the pecans. 
  8. Pour into the prepared pan and bake for 50 minutes to 1 hour or until toothpick inserted into the center comes out clean
