Asparagus Stir-Fry
Ingredients
- 2 tsp cornstarch
- ¼ cup chicken broth
- 4 tsp reduced sodium soy sauce
- 2 tsp chopped gingerroot (divided)
- 1 tsp canola oil
- 1 pound fresh asparagus, cut into 1 inch pieces
- 4 green onions (cut into 1 inch thin pieces)
- 1 cups sliced fresh mushrooms
- 2 small tomatoes (cut into thin wedges)
- 1/2 tsp sesame oil
Methods/steps
- In a small bowl, mix the cornstarch, broth, soy sauce, and ½ tsp ginger until blended and set aside.
- In a non-stick skillet, stir fry the remaining ginger in canola oil for 30 seconds and add asparagus and onions and stir-fry for 4 minutes.
- Add mushrooms and stir-fry for an extra minute.
- Stir cornstarch mixture and add to skillet. Bring to boil, cook and stir for 1 minute until it is think.
- Add tomatoes and sesame oil and cook for one more minute.
