Apple Potato Gratin
Ingredients
- 1 lb. apples, peeled, cored & sliced very thinly
- 1 lb. potatoes, peeled & sliced very thinly
- 1 cup grated gruyere cheese
- 1/2 tsp creole seasoning**
- 1/2 tsp white pepper
- 1 tsp butter
- 2 cup heavy cream
- 3 large egg yolks
- 1/2 tsp salt
- 1/2 tsp nutmeg
Methods/steps
**Creole Seasoning: Can be purchased commercially or homemade with the following: 2-1/2 Tbs paprika, 2 Tbs salt, 2 Tbs garlic powder, 1 Tbs each; black pepper, onion powder, cayenne pepper, dried oregano, dried thyme. Mix well, and store in an air tight container.
- Preheat oven to 400 degrees. Grease a 9 x 9" baking dish with butter.
- Whisk the cream, egg yolks, 1/4 tsp of the salt, pepper.
- Place a layer of potato slices in bottom of pan. Sprinkle half the cheese over the potatoes.
- Layer 1/2 the apples over the cheese. Pour 1/2 of the cream mixture over the top and sprinkle with fresh nutmeg.
- Place another layer of potatoes over the apples, and press down firmly on the layers.
- Layer remaining apples and potatoes then top with remaining cheese and pour the rest of the cream mixture over all.
- Sprinkle again with nutmeg if desired.
- Cover with foil and bake for 30 minutes.
- Remove foil and continue to cook until the potatoes are tender and brown on top, about 25-35 minutes.
- Remove and let stand 10 minutes before serving.
