Ingredients


  • 7-8 cups shredded green cabbage (about 1 head)
  • 3 med Fuji Apples, peeled and coarsely grated
  • 4 green onions, thinly sliced
  • 3 med carrots, peeled and grated
  • 2 tbsp apple cider vinegar
  • Salt and Pepper


SAUCE


  • 2/3 cup sour cream
  • 1/4 cup frozen apple juice concentrate, thawed
  • 1/2 cup mayonnaise
  • 2 tbsp poppyseeds


Methods/steps


  1. Mix cabbage, carrots, apple and green onions in a large bowl. 
  2. Add vinegar and toss to coat. 
  3. Whisk sour cream, mayonnaise, apple juice concentrate and poppy seeds in a medium bowl to blend. 
  4. Add to cabbage mixture and toss to blend. 
  5. Season to taste with salt and pepper. 
  6. Cover and refrigerate at least 1 hour. (Can be made 1 day ahead. Keep refrigerated. Toss to blend before serving.)
