No! Mayonnaise will not spoil if left Un-Refrigerated. The leading cause of spoilage is uncooked foods reaching “danger zone” temperatures.  The Health Department recommends not keeping food above 45 degrees for more then four hours. It is always a good idea to keep items refrigerated if available, this will keep the product fresh. If there is no refrigeration available, try to keep your food in a cool moisture free environment.  If left Un-Refrigerated try and consume within four hours to ensure the food product hasn’t fallen into an unsafe temperature zone.

The number one reason Food Bourne Illness occurs is due to Hygiene. It is extremely important to wash your hands and clean your work surface every time you come in contact with raw foods.  Do not touch your hair, mouth anything that can cross contaminate food.

Commercial mayonnaise contains acids and forms of preservation. Pasteurizingheating yolks to a safe temperature before using, as well as preservatives kill bacteria, which keep food safe from spoilage.  That will allow the product to be safe for consumption if you are unable to refrigerate. So, basically what the pit does is it restricts the air from hitting the avocado. But then that means that the pit only works on the portion that it is touching. Here are some other suggestions to slow down the browning process in your guacamole.

  1. Stir frequently with the pit in the dip before serving, to ensure some kind of coverage of all the dip at one point or another before serving.
  2. In addition, cover with plastic wrap, but press the plastic wrap onto the dip, so air cannot get between it and the avocado.

Those enzymes that are added, then changes the glucose into FRUCTOSE! Now does that sound natural to you?

So, let’s not confuse High Fructose Corn Syrup for good old Fructose! Maybe some corn industry peeps might want you to believe that hype…but it just ain’t so!
